Almond Nougat:

 

Ingredients:

 

  • 250g toasted almonds
  • 200g of honey
  • 200g sugar
  • 2 egg whites
  • Pinch of salt

Preparation:

 

  1. Grind the toasted almonds in a food processor to a coarse texture.
  2. In a saucepan, heat the honey and sugar over medium heat until completely dissolved.
  3. Add the ground almonds to the honey-sugar mixture and cook over low heat for a few minutes, stirring constantly.
  4. Beat the egg whites until stiff with a pinch of salt and add them to the almond-honey mixture, stirring gently.
  5. Pour the mixture into a baking tin lined with baking paper and leave to set for several hours or until firm.
  6. Unmould the nougat and cut into individual portions before serving – enjoy this Christmas classic with your loved ones!

Roscón de Reyes:

 

Ingredients:

 

  • 500g of strong flour
  • 100g sugar
  • 100ml warm milk
  • 50g melted butter
  • 2 eggs
  • 25g fresh yeast
  • Orange and lemon zest
  • Candied fruit for decoration

Preparation:

 

  1. Mix the fresh yeast with the warm milk and a teaspoon of sugar, and leave to stand for 10 minutes.
  2. In a large bowl, mix the flour, sugar, orange and lemon zest and eggs.
  3. Add the yeast-milk mixture and the melted butter and knead until the dough is smooth and elastic.
  4. Form the dough into a ball and let it rest in a warm, draught-free place for 1-2 hours, or until doubled in size.
  5. Divide the dough into two equal parts and form two donuts, making a hole in the centre of each.
  6. Place the donuts on a baking tray lined with baking paper, and leave to rest for 30 minutes.
  7. Preheat the oven to 180°C.
  8. Bake the roscones for 20-25 minutes, or until golden brown and cooked inside.
  9. Decorate the roscones with candied fruit and icing sugar before serving – enjoy this Christmas treat with a nice hot chocolate!

Polvorones:

 

Ingredients:

 

  • 250g flour
  • 125g of lard
  • 75g icing sugar
  • 50g ground almonds
  • A pinch of cinnamon

Preparation:

 

  1. Preheat the oven to 180°C.
  2. In a large bowl, mix the flour, ground almonds, icing sugar and cinnamon.
  3. Add the lard and mix with your hands until you obtain a homogeneous dough.
  4. Form the dough into small balls and place them on a baking tray lined with baking paper.
  5. Bake the polvorones for 12-15 minutes, or until golden brown around the edges.
  6. Let the polvorones cool before sprinkling them with icing sugar. Enjoy these traditional sweets with a hot cup of tea!
